  • Description

  • Dust off those 1970’s cookbooks, because this quick bread has made a comeback on TikTok!  You can use ANY flavor of ice cream (just make sure it’s not low-fat or sugar free).  Obviously vanilla is just going to a neutral sweeter bread, whereas if you use something like Butter Pecan, Lemon, Cherry, Strawberry, etc you’ll have more zip to it!  Feel free to add some spices (cinnamon, zests, etc) to even further enhance your bread!

  • Ingredients

  • 2 cups Ice Cream

  • 1 1/2 cups SELF RISING flour

  • Directions

  • Preheat your oven to 350 degrees (F) (175 C).  Grease and flour (or line with parchment) a loaf pan.  Mix ice cream and flour in bowl just until flour disappears.  Pour mixture into prepared loaf pan and use a rubber spatula to spread out evenly.  Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.

  • Since we’re in the ice cream mindset, let’s enjoy a tasty cocktail that uses ice cream!

  • Ingredients

  • 1 oz Vodka

  • 1 oz White chocolate liqueur

  • 1 oz Strawberry liqueur

  • 3 Scoops Strawberry ice cream

  • Sugar

  • Straw

  • Directions

  • Rim edge of martini glass in coarse sugar.  To an ice filled glass add vodka, white chocolate liqueur and strawberry liqueur.  Shake well to combine.  Add three scoops of strawberry ice cream to martini glass and pour mix over top.  Garnish with a strawberry

  • Slow Cooker Huli Huli Chicken

  • Description

  • Crockpot huli huli chicken is a dinner you can set and forget, then come back to and enjoy in all of its tropical goodness! Each bite of fork-tender chicken is flavored with the best sauce made of ginger, garlic, ketchup, brown sugar, and pineapple juice. It’s the perfect mix of sweet, tangy, and savory!

  • Ingredients

  • 1 cup unsweetened pineapple juice

  • 1/2 cup soy sauce

  • 1/2 cup brown sugar

  • 1/3 cup ketchup

  • 2 teaspoons fresh ginger root grated

  • 1 1/2 teaspoons minced garlic

  • 4 pounds boneless skinless chicken thighs -OR- chicken breasts

  • 2 tablespoons cornstarch

  • Directions

  • In a medium bowl, whisk together your pineapple juice, soy sauce, brown sugar, ketchup, ginger, and garlic. Place your chicken thighs into a crock pot and pour your sauce mixture over the top of them, and cook on low for 5-7 hours. Remove the chicken from the crock pot and whisk in your cornstarch to thicken the sauce. At this point you can either enjoy your chicken in the whole thigh pieces with the sauce, or shred the chicken and add the shredded chicken back to the crock pot and stir it into the sauce. Shredding the chicken makes it an ideal sandwich filler, or topping on rice!

  • One of Russ’s favorite drinks, it carries the Island Vibe and pairs well with the Huli-Huli chicken!

  • Ingredients

  • 1 oz (2 tablespoons) dark rum

  • 1 oz (2 tablespoons) white rum

  • 2 tablespoons fresh orange juice

  • 1/2 oz (1 tablespoon) Cointreau or triple sec

  • 1 tablespoon fresh lime juice

  • 1 teaspoon orgeat syrup or 1 drop pure almond extract

  • 1 teaspoon superfine granulated sugar

  • Dash of grenadine

  • Garnish: an orange slice

  • Directions

  • Shake all ingredients in a cocktail shaker with 1 cup ice cubes, then strain into an old-fashioned glass filled with ice cubes.
